So, let's embark on a culinary journey to the heart of Ireland!

Breakfast: Green Shamrock Smoothies and Irish Soda Bread

Ingredients Green Shamrock Smoothies:

  • 2 cups fresh spinach

  • 2 bananas

  • 1 green apple, cored and sliced

  • 1 cup plain or vanilla yogurt

  • 1 tablespoon honey or maple syrup (adjust to taste)

  • Ice cubes (optional)

Instructions Green Shamrock Smoothies:

  • Combine the spinach, bananas, apple, yogurt, and honey or maple syrup in a blender.

  • Add a handful of ice cubes if you prefer a colder smoothie.

  • Blend until smooth. Add a little water if the mixture is too thick.

Serve Immediately.

Ingredients Irish Soda Bread:

  • 4 cups all-purpose flour, plus more for dusting

  • 1 teaspoon baking soda

  • 1 teaspoon salt

  • 1 ¾ cups buttermilk

Instructions Irish Soda Bread:

  • Preheat your oven to 425°F (220°C) and lightly flour a baking sheet.

  • In a large bowl, mix together the flour, baking soda, and salt. Gradually add the buttermilk, stirring until the dough comes together.

  • Turn the dough out onto a floured surface and knead gently into a round loaf. Place on the prepared baking sheet.

  • Cut a cross on the top of the loaf with a knife. Bake for 30-40 minutes, or until the bread sounds hollow when tapped on the bottom. Cool on a wire rack.

Slice and serve.

Lunch: Irish Stew and Brown Bread

Ingredients Irish Stew:

  • 2 lbs lamb shoulder, cut into chunks

  • 4 large potatoes, peeled and quartered

  • 2 carrots, peeled and sliced

  • 2 onions, chopped

  • 2 celery stalks, sliced

  • 4 cups beef or chicken stock

  • Salt and pepper to taste

  • 2 tablespoons chopped fresh parsley for garnish

Instructions Irish Stew:

  • In a large pot, brown the lamb chunks over medium-high heat. Remove the lamb and set aside.

  • In the same pot, add the onions, carrots, and celery. Cook until soft, about 5 minutes.

  • Return the lamb to the pot. Add the potatoes and stock. Season with salt and pepper.

  • Bring to a boil, then reduce heat to low, cover, and simmer for about 2 hours, or until the meat is tender. .

Sprinkle with parsley before serving

Ingredients Brown Bread:

  • 2 cups whole wheat flour

  • 1 cup all-purpose flour

  • 1 teaspoon baking soda

  • 1 teaspoon salt

  • 1 ½ cups buttermilk

Instructions Brown Bread:

  • Preheat oven to 400°F (200°C). Grease a loaf pan.

  • In a large bowl, mix together the whole wheat flour, all-purpose flour, baking soda, and salt. Gradually stir in the buttermilk until the dough comes together.

  • Transfer the dough to the prepared loaf pan and smooth the top with a wet spoon.

  • Bake for about 45 minutes, or until the bread sounds hollow when tapped. Cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.

Slice and serve.

Snack: Clover-Shaped Vegetable Platter

Instructions:

Simply arrange vegetables like broccoli, green bell pepper strips, cucumber, and snap peas on a platter in the shape of a clover. Serve with your favorite dip.

Dinner: Corned Beef and Cabbage, Colcannon, and Guinness Chocolate Cake

Ingredients for Corned Beef and Cabbage:

  • 3 lbs corned beef brisket with spice packet

  • 4 large potatoes, peeled and quartered

  • 2 carrots, peeled and sliced

  • 1 head of cabbage, cut into wedges

  • Water to cover

Instructions for Corned Beef and Cabbage:

  • Place the corned beef in a large pot and cover with water. Add the spice packet that came with the corned beef.

  • Bring to a boil, then reduce heat to low, cover, and simmer for about 4 hours, or until tender.

  • Add the potatoes and carrots to the pot during the last 30 minutes of cooking. Add the cabbage during the last 15 minutes.

  • Remove the meat and let rest for 15 minutes before slicing. Serve with the vegetables.

Serve with the vegetables.

Ingredients for Colcannon:

  • 4 large potatoes, peeled and quartered

  • 1 cup milk

  • 4 tablespoons butter

  • ½ head cabbage, finely shredded

  • 4 green onions, sliced

  • Salt and pepper to taste

Instructions For the Colcannon::

  1. Boil the potatoes until tender, about 20 minutes. Drain and return them to the pot.

  2. Add the milk and butter to the potatoes. Mash until smooth.

  3. In another pan, cook the cabbage and green onions with a bit of butter until soft, about 5 minutes.

  4. Stir the cabbage mixture into the mashed potatoes. Season with salt and pepper to taste.

Ingredients For the Guinness Chocolate Cake:

  1. 1 cup Guinness stout

  2. 1 stick plus 2 tablespoons unsalted butter

  3. ¾ cup unsweetened cocoa powder

  4. 2 cups sugar

  5. ¾ cup sour cream

  6. 2 large eggs

  7. 1 tablespoon vanilla extract

  8. 2 cups all-purpose flour

  9. 2 ½ teaspoons baking soda

Instructions For the Guinness Chocolate Cake:

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

  2. In a saucepan, heat the Guinness and butter until the butter is melted. Remove from heat and whisk in the cocoa and sugar.

  3. Beat the sour cream with the eggs and vanilla in a separate bowl, then add to the beer mixture.

  4. Sift together the flour and baking soda, and fold into the batter.
