But feel free to suggest a different name…. We will provide a one day meal plan (Breakfast, Lunch, Dinner and a Fun Snack!).
This week’s one-day meal plan is for a family of four on a budget with a Tex-Mex twist:
Breakfast: Breakfast Burritos
Ingredients:
8 flour tortillas
8 large eggs
1/2 cup of milk
1 tablespoon of vegetable oil
1/2 cup of shredded cheddar cheese
1/2 cup of salsa
Salt and pepper to taste
Instructions:
In a large mixing bowl, whisk together eggs, milk, salt, and pepper.
In a non-stick pan, heat vegetable oil over medium heat. Add egg mixture to the pan and stir until scrambled and fully cooked.
Warm up the tortillas in the microwave or on a skillet.
To assemble, place a spoonful of scrambled eggs on each tortilla, top with shredded cheese and salsa, then roll up into a burrito.
Lunch: Black Bean Quesadillas
Ingredients:
4 large flour tortillas
1 can of black beans, drained and rinsed
1 cup of shredded cheddar cheese
1/2 cup of salsa
1 tablespoon of vegetable oil
Instructions:
In a medium bowl, mash black beans with a fork.
On a large skillet over medium-high heat, heat up the vegetable oil.
Place one tortilla on the skillet and sprinkle 1/4 cup of shredded cheese on top.
Add a spoonful of the mashed black beans and 2 tablespoons of salsa on one half of the tortilla.
Fold the tortilla in half and press down lightly with a spatula.
Cook for 2-3 minutes on each side until the cheese is melted and the tortilla is crispy.
Repeat with the remaining tortillas and ingredients.
Snack: Tex-Mex Popcorn
Ingredients:
4 cups of air-popped popcorn
2 tablespoons of melted butter
1/4 teaspoon of chili powder
1/4 teaspoon of cumin
Salt to taste
Instructions:
In a small bowl, mix together melted butter, chili powder, cumin, and salt.
Pour the mixture over the popcorn and toss to coat evenly.
Serve and enjoy!
Dinner: Tex-Mex Stuffed Peppers
Ingredients:
4 large bell peppers, halved and seeded
1 pound of ground beef
1 can of black beans, drained and rinsed
1 cup of cooked rice
1/2 cup of salsa
1/2 cup of shredded cheddar cheese
Salt and pepper to taste
Instructions:
Preheat oven to 375°F.
In a large skillet over medium heat, cook ground beef until browned.
Add black beans, cooked rice, and salsa to the skillet, and stir to combine.
Season with salt and pepper to taste.
Stuff each bell pepper half with the ground beef mixture and place on a baking sheet.
Top each pepper with shredded cheese.
Bake in the preheated oven for 25-30 minutes until the peppers are tender and the cheese is melted.
